Salad —you may agree with me— can sometimes be kind of boring. This is not the case for this delicious mango and scampi salad recipe. Although this is a Paleo diet dish, you can easily modify it to become a vegan one as 90% of it is completely plant-based! It may be used as a starter —beautifully served on a banana leaf, as a main, if you load it with scampi— but it will have its most stellar role at the buffet of every party with your friends asking for you to bring it over and over again.

1 Fresh Mango

2 Cups of Peeled Scampi

1 Red Bell Pepper

Juice of 1 lime

1 Red Onion

1 Cup of Coriander (chopped)

Sea Salt to Taste

If you are using fresh unshelled scampi steam them until pink. Let cool down and then remove head and shell. Cut them into thick slices and transfer them into a salad bowl. Peel mangoes and cut their flesh into cubes. Chop the onion thinly. Slice the pepper into small squares. Add all these ingredients to the salad bowl with the scampi and then add the lime and salt and garnish with the chopped coriander.
